This is an outstanding opportunity for an experienced Sous Chef to be part of a well-established team going through an exciting change transition. An exciting, challenging yet very rewarding position for right Sous Chef who has the passion, knowledge & willingness to work with a great team. As Sous Chef you will be expected to exceed all guest expectations brining your obsession for food and love of cooking to each & every dish. The right Sous Chef will be working with a small but dedicated brigade of chefs & reporting directly to the Head Chef. Experience in 4*/5* Hotels or Fine Dining Restaurants of 2 AA Rosette etc. is preferred. A creative Head Chef is in place focused on creative Irish cuisine, own garden, fresh vegetables and aiming for further success. This position is for a driven, passionate and foodie head chef always wanting to try new ingredients, new dishes and fantastic presentation, is that YOU? Specific Duties: Assist the Head Chef to retain the standards in the Fine Dining restaurant whilst working towards achieving industry awards. Oversee the main kitchen in Heads Chefs absence to include freshness of ingredients, level of staffing, mise en place. Assist with menu writing and dish creating. Ensure that the section is set for service. Assist in training all junior Chefs and Kitchen Porters. Ensure the kitchen is organised with the correct daily menus, mis en place, job lists and that kitchen jobs are prioritised in the correct order. Assist in maintaining a professional level in each kitchen adhering to the Standard Operating Procedures and Policies. Assist and prepare the day to day ordering for the kitchen. Ensure that the kitchen areas are clean and meet safety standards. Assist with HACCP and Health and Safety procedures. Ensure that all kitchen equipment is fully functional, stored correctly and staff are looking after the equipment. Is creative, focused on standards and achieving awards and recognition.
